Yay for the weekend! I enjoyed time tonight with sweet friends. We went to Chili’s for our friend, Gloria’s, birthday. I was able to find a sirloin with grilled avocado and a fresco salad (whatever that is). Whatever it is, it finally added spinach back to my diet so we’ll see how that goes. I don’t expect it will do anything but I should know soon enough. I also had one glass of wine. Seems to be a theme these days.
I woke up with a headache this morning. I took some Excedrin but it never quite went away until later in the day when I took 2 more Excedrin. I only had 1 glass of wine but it was Barefoot and I’m not a fan and that could be why. But that’s pretty much why I only had one glass tonight. I didn’t want to feel bad tomorrow.
I’ve got heartburn tonight but I can’t take my Prilosec tomorrow so I hope it goes away. In hindsight and after saying that out loud, that’s another reason why I shouldn’t have drank that glass of wine tonight. I know it doesn’t help it. I’ll take some coconut oil and hope that gets rid of it.
For breakfast I had bacon and scrambled eggs. Lunch was Organic Harvest again. This time I had roast and carrots, herb roasted cauliflower and creamed kale. I didn’t eat much of the kale though. I realized I didn’t check the sneeze guard to see whether it was paleo or not. Wondering if it had dairy in it. I also bought a couple of paleo cookies. They were divine!!
Heading off to bed. Busy day tomorrow.
What a busy weekend. Last night we decorated for our Harley Owners Group Valentine party and then we went out to eat. We didn’t get home until 10:00 and I was pooped so no blog last night.
Yesterday’s breakfast was bacon and scrambled eggs. Lunch was left over roast, potatoes, carrots and onions. We went to Chili’s after decorating and I asked for the allergy menu. She hands me the little computer that sits on the table. It was actually kind of neat but I like the ones that show each food item with columns that show if it contains certain allergens. So I looked at all the food that were gluten free and decided on the chicken tortilla soup without the tortillas. It wasn’t until after she walked off that I looked at the foods that didn’t contain dairy and I see the soup is not there so I’m sure it had cream in it. I’m sort of ok with that because I desparately needed something different to eat. But I will be more careful in the future.
Tonight we have our Valentine party complete with steaks, baked potato and salad. I will need to take my ghee and dressing and make sure my steak is cooked with no garlic on it but it will be a very compliant meal.
I’ve slept 2 nights with the oxygen now. Thursday night wasn’t bad. I woke up a couple of times and I didn’t really get irritated with it or feel like it kept me awake. The only thing I really noticed was my nose was stopped up. Last night was a different story though. I woke up several times and felt irritated by the tubes and the thing in my nose. Plus, my mouth was extremely dry.
When I woke up, my nose felt like it had wads of cotton stuffed inside of it, but there was nothing to blow out. I also had a headache and my fingers were super swollen and I couldn’t get my rings off. The longer I was up, the better my nose got and I can now get my rings off. I used my Neti pot and was able to blow a little bit out but my nose still feels swollen. I think I’ll google it to see if there are any recommendations of how to prevent this.
Two steps forward, one step back. But I can do this!
It wasn’t alot but I had almonds in a key lime Lara Bar earlier in the day. I will say that the key lime flavor is not my favorite. Really kind of disappointed considering how much I love key lime pie. I probably missed the point but oh well.
I weighed this morning and was up .2 from the last time I weighed, which I think was last Friday. I’ll weigh again Wednesday and see what it says. Wednesday should be when I weigh anyway. If there is no weight loss then I’ll need to lay off the gluten free pancakes and homemade chocolate.
Today I had bacon and boiled eggs for breakfast. For lunch it was leftover porkchop, roasted zucchini and sweet potato fries. For supper, I found a website for a a recipe builder. You enter all the ingredients and it gives you recipes that contain all the ingredients you enter. It’s called Supercook.com. I chose a recipe called Beef Cabbage Hash. Ingredients are hamburger, onion, cabbage and potatoes. It called for water but I used beef broth and I added salt, pepper and onion powder. I’m still avoiding garlic or I would have added that too. It was ok but seemed to be missing something. The good thing is that it had everything I needed. Protein, vegetables and a healthy fat (olive oil). The hubs seemed to enjoy it. He added garlic and ate with crackers. Interesting.

Yesterday was the first time I forgot to write my blog. I really didn’t have time but I mostly forgot. We were at the Birmingham World of Wheels raising money for Big Oak Ranch. Such a wonderful cause! I briefly thought about it while we were there but once we got home, I got ready for bed and never gave it another thought.
Let’s see if I can remember what I ate. Bacon and 2 boiled eggs for breakfast. For lunch I had leftover sloppy joe meat with green beans. Supper was leftover bacon wrapped chicken with roasted zucchini. I ate that on the way to World of Wheels. And yes, I had to really think about what I had. And this is why I write it down. Because if I have a really strong symptom come up, I want to be able to remember what I ate.
Today was another busy day. I had bacon and fried eggs for breakfast and I never did eat lunch. I took my husband back down to the World of Wheels and I went to work to catch up on some things. I ate a Lara bar and stopped on my way back down there and ate some chips. That held me over until we went out for our friend’s birthday at a mexican restaurant. I decided on the chicken soup. It has rice in it and garlic so I took a chance eating it but it was hard enough not having a margarita and no chips and dip. I think eating chicken soup was an acceptable choice.
One final note for the day. I tried taking my coconut oil in my coffee and let me tell you, it was not good! I felt like I was drinking oil. Very greasy. I’m sure it would be better if it were just a teaspoon instead of 2 tablespoons. I looked it up today and there are several ways I can get the oil in and one was mixing cocoa, coconut oil and maple syrup and then cooling in the fridge. Sounds good to me!!
It’s been a few days since I added coconut back so I think it’s time to add something else. I have decided it will be almonds. I considered spinach since that is a common ingredient in restaurant salads but almonds would allow so much more. There’s almond milk, almond butter, whole almonds as a snack and roasted almonds. Those are especially good on a salad.
We’re going to a Mexican restaurant Saturday night for a friend’s birthday and I’m kind of apprehensive about it. No margaritas. No chips and salsa. No cheese dip. I should be thinking ahead of what I could take to snack on. And I need to figure out what I will eat for my meal. No matter what it is, it will have garlic in it. I’ve about resigned myself to the fact that garlic will be one of the things I have to watch out for. It seems to give me the burps and makes me feel bloated.
Speaking of bloated, my stomach has been making some loud gurgling sounds tonight. Not sure why since I haven’t added anything new. Could be from supper I guess but that didn’t happen when I ate it the other night. I had another headache earlier but took some Excedrin and it pretty much went away. And I’ve been super irritable today. Maybe Friday will fix that.
For breakfast I had bacon and scrambled eggs. Lunch was leftover chicken and sauteed kale. We had our HOG meeting tonight so I took leftover kraut and chicken apple sausage with green beans. Everyone brought dishes for the meal tonight and everything on that table was either cheese or gluten. So I’m glad I took my own food. There was a fruit tray so I was able to eat some grapes!

I had scrambled eggs and bacon for breakfast and may I say that it was wonderful! Who knew I would miss bacon and eggs so much? But it made me feel like I’m getting back to some sort of normalcy. The bacon did make my heartburn flare up though so I had to take one of my OTC Prilosecs. It’s another scenario though where I wonder if it was really the bacon or if it was just my body still adjusting from the lack of a PPI. Either way, I’m pretty happy I was able to go so long without it.
I meant to put some coconut sugar in my coffee this morning but I forgot. So I used some coconut oil in my salmon dish instead. I think I’ll still use the sugar tomorrow morning just to see. That will put me one step closer to being able to have even more dishes and condiments.
For lunch I had leftover sloppy joes, sweet potato fries and broccoli. The broccoli was crazy hot which is really weird since all it had on it was onion powder, salt and pepper. Surely pepper wouldn’t set my mouth on fire and break me out in a sweat but that’s the only thing it could have been. For supper I had salmon, mashed potatoes and roasted zucchini. I couldn’t find a new recipe for salmon that I had all the ingredients or one that had ingredients I could have. So I made my recipe up as I went. It was ok but I overcooked the salmon so it was dry. But I used coconut oil, lime juice, balsamic vinegar, cilantro and salt. I melted the coconut oil but in hindsight I think I should have left it solid so that I could brush it on but it would have melted quick enough so I guess it didn’t matter.
Anxious to get to the doctor tomorrow to discuss my MTHFR gene mutation and my diet changes. Also curious to hear what she thinks about my fatigue not being any better. Oh and Prilosec. I need to make some notes!
Today was the day to try new things. For breakfast I had pancakes make with gluten free pancake mix from Young Living. They weren’t totally paleo friendly because there was oat flour in them but that’s ok. I’m not sticking to paleo 100% and I plan to indulge every now and then so I’m considering that my indulgance for the week. They were not easy to make because it called for everything under the sun but they weren’t bad. I think what made them taste a little off was the ghee. It gave them a bit of a nutty flavor. The maple syrup was delicious though.
I then tried making some mayonnaise. I found a simple 3 ingredient recipe. Olive oil, egg and lemon juice. I don’t have an emulsifier so I used my food processor. Instructions didn’t give any specifics on how much to mix or how fast or anything but it was pure liquid. I think I should have pulsed it maybe.
Lastly, I made homemade sloppy joes. We didn’t really have anything in there to eat but we did have some ground hamburger so I kept digging for recipes until I found one we would eat and where we had all of the ingredients. I didn’t notice until everything was in there that it said to cook for 2-3 hours (longer if able). I cooked it for probably an hour and then ate them on top of my sweet potato fries. I thought they were pretty good but my husband said it was missing a little something. I think it was that they didn’t cook long enough.
The only other thing I ate today that I didn’t mention above was bacon with my pancakes and roasted broccoli with the sloppy joes. I never ate lunch again because I really wasn’t hungry and we really didn’t have anything to eat for lunch. I know that’s not good but I think it’s partly because I’m getting bored with our food. I spent a lot of time on Pinterest today pinning recipes. I still don’t think I found anything that will become one of our new favorite foods.
This is my 3rd day without Prilosec. I was feeling it a good bit earlier but have been fine since. No other symptoms or problems. Yay!!
Tomorrow, I need to see how I can add coconut into my diet somewhere. I think I have coconut crystals in there. Maybe I’ll try putting that in my coffee.
